Jalebi

View attachment 15462

Ingredients:

  • 2 cups self raising flour
  • 1/2 tsp baking powder
  • 1 cup yogurt
  • Vegetable/canola/sunflower cooking oil for deep frying
  • 1 cup sugar
  • Few strands saffron
  • 1/4 tsp cardamom powder
  • 2 drops orange food colour
  • 2 tbsps rose water
Preparation:

  • Mix the flour, baking powder and yogurt into a batter and keep aside for 24 hours to ferment.
  • Pour batter into a ketchup dispensing bottle.
  • To make sugar syrup: Melt the sugar with the rose water and boil to get a one thread consistency. To check for one thread consistency, carefully dip the tip of your index finger into the syrup, touch your finger and thumb together and genly tease apart. If one thread is formed between your finger and thumb the syrup is done.
  • Turn off fire, add the saffron strands and cardamom and stir well.
  • Heat the oil in a deep wok-like dish. To test for the right temperature, drop a small amount of batter into the oil. If it sizzles and rises to the top of the oil, the oil is hot enough. Keep the flame on medium at all times to ensure all round cooking of the jalebis.
  • Now hold the ketchup dispenser over the hot oil and squeeze the batter into the oil into a wiggly, randomly coiled circle. Squeeze out several at a time.
  • Fry till light golden and then remove and put directly into the sugar syrup.
  • Allow to soak for 2-3 minutes and then remove.
  • Serve warm.

Aata aut Gond Ke Laddoo - आटा और गोंद के लड्डू

Ingredients
Aata (Whole Wheat Flour) - 2 cups
Mixed Nuts - 1 cup, chopped, I used an authentic mix of cashew, almonds and pecans
Gond (Edible Gum) - 1 cup
Jaggery - 1.5 cups
Kali Mirch (Black Pepper) - 2 tsps, coarsely ground
Ghee (Clarified Butter) - 1 cup

Preparation

  • Take 2 tbsp ghee in a non-stick pan and roast all nuts till golden brown and keep aside.
  • Take 2 tbsp ghee in the same pan and roast gond crystals, till golden brown. They originally look like mishri or rock sugar crystals (clear color), but once they are roasted, they look white (like sago papad). They basically get puffed up when roasting and you have to let them all nicely roasted. Keep them aside. I quickly blended to crush them to coarse powder. You can use your hands too for this, as they are easily mashable, but I was just in hurry :)
  • Heat the rest of the ghee in the same pan and roast aata till nice aroma comes and it has a nice color. Take it off the heat immediately.
  • Mix everything (including black pepper) in a big bowl and let it cool down till you can shape the mix in ball form. Make them into desired shaped or sized balls and enjoy :)
Note: The quantity I used made me about 20 odd laddoos of the size you see in the picture.

Serving
Serve them as mentioned above. For someone like me, who likes things warm, nuke it in Microwave for about 5-10 seconds before eating. If you think it is mouthful, feel free to add little warm milk and eat it like a pudding.

ballu shahi

Ingredient :-

maida - 1 katori
ghee (dalda ya phir desi ) - 1/2 katori
chini - 1katori
mitha soda- 1/4 chamch
namak - 1/4 chamch
tel - talne ke liye
Method

sabse pahle maida, mitha soda, ghee,ek chamach chini , namak dal kar sabko ache se mile le. jab sab chize ache se mil jaye tab isme pani dal kar tight sa atta guth le. iss atte ko 10-15 min ke liye rakh de or phir iski goll goll loyi si bana le. iske bad ek kadhayi me talne ke liye tel dalkar garm kare or phir in goll goll loiyo ko dhimi anch par ache se pakka le. ab ek dusri khadayi me chini or 3 -4 chamch pani ka dal kar ek gadhi si chasni bana le jab chasni ban jaye issme talli hui maide ki golliyo ko dal kar halke halke hath se hilaye or ache se chasni me alat palat kar lapet le. aur phir thodi der ke liye isse aise hi chhod de badme jab chasni thndi ho jaye in ballu sahi ko palat me nikal le . tayar hai ballu shahi :)

Jhatpat tips

maida, mitha soda, ghee,ek chamach chini, namak dalkar milane ke bad ghee kam to nahi hai check karne ke liye iss mishran ko hatheli me dabaye agar ye ikkatha ho jata hai to matlab ghee pura hai nahi to thoda aur ghee dal le aur phir badme iska atta gunthe.
