The olives are pressed to release oil. The oil that comes out from the very 'first' press is the EXTRA virgin olive oil. The same olives are then again pressed to release more oil - the 'second' press oil is the 'virgin' oil - unlike the terminology used in our society! A virgin is a virgin - there is no concept of being 'extra' virgin!

If that is true, then why smoke point of virgin olive oil is higher comparing smoke point of extra virgin olive oil?

That depends on the type and amount a particular type of of fatty acids present in the oil.

But you said in your original post that same olives are pressed to release more oil . Then How come same olives can have different composition of fatty acids. The composition should be same. Isn't it.

If the smoking point is different (as you say), then the composition is different. Probably due to impurities in subsequent presses.

If you are using same extraction process(same temperature, and Same mechanism) on same types of olives then I do not think you are adding impurities in it. Virgin olive oil is made from slightly riper than those used in Extra - Virgin olive oil. That is why the percentage of acid is different and so is the smoking point. So I think my answer was right

Impurities need not be added from outside. Protein, carbohydrates etc of the olives are impurities in the oil.

main nutrients pholynol hote hai... jyada press karne par inki concentration kam ho jaati hai... and jo baaki constituents hote hai unhe impurities bhi nahi kah sakte... but wo jyada useful nahi hai.. so pholynols ki concentration jyaa hona important hai... bcos oil kam quantity mai use kiya jaata hai....
